  1. Flour :390 gor 3 cups loosely packed
  2. Water :312 ml or 1 and 1/4 cup+1 tbsp
  3. Salt :1 tsp or 6g
  4. Sugar :1 tbsp or 12.5 g
  5. Yeast :1 and 1/2 tsp or 4.5g(If using Active Dry yeast use 2 tsp)

How to make this Turkish Bread, Bazlama

In this Turkish flatbread recipe, we are making it in five simple steps.

  1. Prepare the dough
  2. First Proofing (30 minutes)
  3. Divide and shape into round Balls and then roll out to form dough discs
  4. Bake the Bazlama or Turkish flatbread on a preheated skillet.

1.Prepare the dough

In this No Knead Bread Recipe we are making the bread dough in a very simple and easy method.

Pour in the lukewarm water in to a bowl.

Then add the sugar,salt and yeast.

Stir and Mix until the ingredients dissolve.

Add the flour and combine them all together to form a shaggy mass of dough.

Make sure there are no dry patches left behind.

2.Proof the dough

Now cover the dough and let it rise for 30 minutes.

3.Divide and shape the dough

After 30 minutes, pull and stretch the dough from all four sides.

As the dough is very sticky to handle ,Dip your hands in water to prevent any chance of dough sticking to your hands.

Divide the dough into four equal halves.

Shape each of them into round balls.

As the dough is very sticky dust it with enough flour so that we can work smoothly.

Work less with this sticky dough while shaping it into ball so that we can handle it well.

Take the first one that we shaped into ball and cover the rest.

Flatten the dough ball to form a flat round disc of approximately 16-17 cm in diameter and 1 and 1/2 cm in thickness.

Take it onto the preheated pan.

For Best results use heavy bottomed pan like cast iron skillet.

The one I have use is 10.5 inch Lodge Cast iron Pan which is great for making Flatbreads and pan pizzas.

4.Bake the Turkish bread, Bazlama on stove top.

Heat a heavy bottomed cast iron pan over medium heat and place the rolled out dough on it.

Turn it over after around 1 minute when it starts to puff up on top and cook the other side.

Turn it again (after 1 and half -2 minutes) and repeat this for a few times. It will be done in approximately 6-7 minutes.

Transfer it on a tea towel and cover with another tea towel. Repeat for the remaining flattened dough circles.

Note :As this Turkish Flat Bread ,Bazlama is a very thick flatbread, we need the inside of bread to be well cooked.So We need to Cook it over low to medium heat.

When I first made this Bazlama,Turkish Flatbread, the bread turned out to be doughy in the middle.The reason was, I cooked it on a little high heat and the out side turned brown faster and the inside remained uncooked or undercooked.

Why My Bazlama,Turkish flatbread turned out doughy in the middle

As Bazlama is a thick flatbread, if we bake them on stove top in a really hot preheated cast iron pan, the top will burned too fast and the center will not get cooked properly.

So cook it over medium heat so that the center of the bread get cooked completely.

Let the bread sit for 3-4 minutes after cooking and before slicing.Thus the entrapped steam can cook the bread completely.

Bazlama has a texture very similar to a combination of crumpet and Pita bread.

They taste very similar to a pita bread.

It is soft and moist in the middle and contain lots of open pores.

You can keep this Easy No knead bread dough in fridge after the first proofing .I prefer to do the stretching and folding as well before keeping it in fridge.

When you want to bake the Bazlama,Take the dough outside and let it sit at room temperature for 30 minutes or until it comes to room temperature.
